I found this recipe in a magazine some time ago
And it has been one of my favorite recipes ever since then
This Is A Great Recipe For Christmas and Thanksgiving Too!
~ Sweet Potato Biscuit Recipe ~
2 1/2 cups flour
2 tablespoons baking powder
1/8 teaspoon allspice
1/8 teaspoon ground cloves
1/2 teaspoon salt
1/4 cup light brown sugar (packed)
1/4 cup unsalted butter-chilled
1/4 cup shortening-chilled
1 1/2 cups sweet potatoes-mashed
2 tablespoons milk
Preheat oven to 450
Mix flour, baking powder,allspice,cloves and salt in a large bowl.
Gently blend in the brown sugar. Cut in the chilled and butter
and shortening with a pastry cutter or pulse in a food processor
until the mixture is coarse-crumbly. Stir in the mashed sweet
pototoes and kneed until the dough holds together.
Place dough on lightly floored surface, kneed gently for about one minute
adding a little flour as neccessary to incorporate all of the ingredients.
Pat the dough in a 1/2 inch circle and let it rest,
cover with a towel for about 10 or 15 minutes.
Cut out the biscuits with a 2 inch round cutter dipped in flour.
Place on an ungreased baking sheet, arranging them about 3/4 inches apart,
brush the tops with milk. Bake for 10-12 minutes.
Makes 18 biscuits
