~ Chocolate Mint Cheesecake ~
Base:
9 oz plain sweet biscuits
3 Tablespoon cocoa
4 1/2 oz butter
Filling:
16oz cream cheese
2/3 Cup sugar
2 teaspoon vanilla essence
3 teaspoons gelatine
4 teaspoons water
2 cups cream
12 after dinner mints or small cake peppermint chocolate
2 tablespoons water, extra
Base:
Crush biscuits finely, add cocoa, mix well. Stir in the butter.
Press
Onto sides and base of 7inch flan tin with removable base.
Refrigerate
While preparing filling.
Filling:
Beat cream cheese, sugar and vanilla until smooth. Sprinkle gelatine
Over water, dissolve over hot water, cool. Add to cream cheese mixture,
Beat well, fold in whipped cream. Cissolve mints with extra water in
Top of double saucepan over simmering water. Fold into cream mixture.
Spoon mixture evenly onto crumb base. Refridgerate until set.
